Coconut Curry Chicken

  1. In a large saucepan, heat the oil over medium heat. Add the onion and cook until softened, about 5 minutes.

  3. Add the bell pepper and cook for another 2 minutes.
  4. Stir in the curry powder, cumin, turmeric, and cayenne pepper and cook for 1 minute.
  5. Add the chicken and cook until browned, about 5 minutes.
  6. Stir in the coconut milk, chicken broth, brown sugar, and lemon juice. Season with salt and pepper, to taste.
  7. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
  8. Serve over rice, garnished with fresh cilantro or chopped peanuts, if desired.
