Creamy Tomato Soup

  1. In a large saucepan, melt butter over medium heat
  2. Add onion and garlic and sauté until softened, about 5 minutes
  3. Stir in diced tomatoes, chicken broth, sugar, salt, and pepper
  4. Bring to a boil, then reduce heat and let simmer for 10 minutes
  5. Blend the soup using an immersion blender or transfer to a blender and blend until smooth
  6. Stir in heavy cream and heat through
  7. Serve hot, garnished with fresh basil or croutons if desired
