Ingredients:

Instructions:

  1. In a bowl, mix together the shredded cheddar cheese, chopped black olives, and diced green chilies.
  2. Place a large flour tortilla on a griddle or skillet over medium heat.
  3. Sprinkle the cheese mixture over one half of the tortilla, leaving a little space around the edges.
  4. Fold the other half of the tortilla over the cheese mixture and press down lightly with a spatula.
  5. Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
  6. Repeat with the remaining tortillas and cheese mixture.
  7. Cut the quesadillas into squares, and serve with sour cream, salsa, and guacamole.
