The Story of the Engagement Chicken

Once upon a time, there was a beautiful chicken dish called "Engagement Chicken." It was so named because the story goes that whoever cooked it for their significant other was sure to get a marriage proposal.

Ingredients:

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Rinse chicken inside and out, and pat dry with paper towels.
  3. Stuff the cavity of the chicken with the lemon halves and garlic halves.
  4. In a small bowl, mix together thyme, rosemary, salt, and pepper.
  5. Rub the mixture all over the outside of the chicken, and then drizzle with olive oil.
  6. Place the chicken in a roasting pan and pour the chicken broth into the bottom of the pan.
  7. Roast the chicken in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 10 minutes before carving and serving.
