Once upon a time, in a land far, far away, there was a leprechaun named Seamus. Seamus loved to cook, and he was always experimenting with new recipes.

One day, Seamus decided to make a batch of Irish Colcannon. He gathered all the ingredients and started cooking.

But as he was mashing the potatoes, Seamus realized that he had forgotten to add the milk and butter. "Oh no!" he exclaimed. "What am I going to do?"

Just then, a fairy appeared. "Why so sad, Seamus?" she asked.

"I forgot to add the milk and butter to my Colcannon," Seamus explained. "Now it's going to be dry and flavorless."

The fairy smiled. "I have an idea. Why don't you add a little bit of magic to your recipe?"

"Magic?" Seamus asked skeptically.

"Yes, magic!" the fairy exclaimed. "Just sprinkle a little bit of fairy dust on top of your Colcannon, and watch the magic happen."

So Seamus sprinkled a pinch of fairy dust on top of his Colcannon, and to his amazement, the potatoes and greens transformed into a creamy, buttery, and utterly delicious dish.

"Wow!" Seamus exclaimed. "This is the best Colcannon I've ever tasted!"

The fairy giggled. "I told you it was magic."

From that day on, Seamus added a pinch of fairy dust to all of his recipes, and his dishes were always the talk of the town.

Irish Colcannon

Looking for a traditional Irish dish to celebrate St. Patrick's Day? Look no further than Irish Colcannon! This hearty and delicious side dish is made with mashed potatoes, kale or cabbage, and plenty of butter and cream.

Ingredients:

Instructions:

  1. Boil the potatoes in a large pot of salted water until tender, about 20 minutes. Drain and return the potatoes to the pot.
  2. In a separate pot, boil the kale or cabbage until tender, about 5-7 minutes. Drain and add the greens to the potatoes.
  3. Add the milk or cream and butter to the pot with the potatoes and greens. Mash everything together with a potato masher until smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot with a pat of butter on top.
