Peanut Butter Cookies

Peanut butter cookies were always a special treat in my family. Whenever we had a special occasion or just wanted a sweet snack, my mother would whip up a batch. They were always soft, chewy, and bursting with peanut butter flavor. And the best part was that they were so easy to make. We would often make a double batch so we could share some with our neighbors.

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter and sugar until smooth. Beat in egg and baking soda until well blended.
  3. Drop dough by rounded tablespoonfuls onto the prepared baking sheet.
  4. Bake for 8 to 10 minutes, or until golden. Allow cookies to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
