Once upon a time, a group of leprechauns were having a picnic in a field of clovers. They were munching on plain old carrots and celery sticks, when suddenly, a rainbow appeared in the sky!

"What's that?" one of the leprechauns asked.

"It's a rainbow!" another leprechaun exclaimed. "And you know what's at the end of a rainbow, don't you?"

"Gold!" the leprechauns cheered.

They scampered off in search of the end of the rainbow, but when they got there, all they found was a pot of carrots and celery sticks. "What a disappointment," they grumbled.

Just then, a fairy appeared. "Why are you so sad?" she asked.

"We were hoping for gold, but all we got was a pot of vegetables," the leprechauns explained.

The fairy giggled. "But vegetables are a treasure too! Especially when they're arranged in a rainbow pattern like this." She snapped her fingers, and the pot of vegetables transformed into a colorful, delicious feast.

The leprechauns were delighted. "Wow! We never knew vegetables could be so magical," they exclaimed. And from that day on, the leprechauns included veggies in their picnic's!

Rainbow Veggie Skewers

  1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning.
  2. Cut the bell peppers into chunks, and cut the red onion into wedges.
  3. Thread the vegetables onto the skewers in a rainbow pattern: red, orange, yellow, green, and purple (represented by the red onion).
  4. Whisk together the olive oil, salt, black pepper, basil, and oregano in a small bowl.
  5. Brush the skewers with the olive oil mixture.
  6. Grill the skewers on medium-high heat for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from the grill and serve hot. Enjoy the rainbow of flavors!
