Once upon a time, there was a young Italian chef named Giuseppe. Giuseppe grew up in Rome, where he learned to cook traditional Italian dishes from his grandmother. One of his favorite dishes to make was spaghetti carbonara.

Spaghetti Carbonara

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.
  2. Meanwhile, in a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set it aside, leaving the bacon fat in the pan.
  3. In a large bowl, whisk together the eggs, parmesan cheese, heavy cream, pepper, and salt until well combined.
  4. Add the garlic to the bacon fat in the skillet and cook for 1 minute, or until fragrant.
  5. Drain the spaghetti, reserving 1 cup of the pasta water. Add the spaghetti to the egg mixture and stir until the spaghetti is coated with the sauce.
  6. Add the spaghetti and egg mixture to the skillet with the garlic and bacon fat. Cook over low heat, stirring constantly, for 2-3 minutes, or until the sauce has thickened and the spaghetti is well coated.
  7. If the sauce is too thick, add some of the reserved pasta water to thin it out. Stir in the crispy bacon.
  8. Garnish with chopped parsley and serve immediately.
