Strawberry Cheesecake

Ingredients:

Instructions:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter together. Press mixture into the bottom of a 9-inch springform pan.
  3. Beat cream cheese, 1 cup sugar, and vanilla extract together in a bowl until smooth. Beat in eggs, one at a time.
  4. Pour mixture into the prepared crust.
  5. Bake in the preheated oven for 45 minutes. Let cool completely.
  6. Mash strawberries in a saucepan. Stir 1/4 cup sugar and cornstarch into strawberries. Cook and stir over medium heat until mixture comes to a boil. Reduce heat and continue cooking until mixture thickens, about 5 minutes.
  7. Spread strawberry mixture over cooled cheesecake.
  8. Refrigerate cheesecake until chilled, at least 2 hours.
